Chicken Tinga Tacos


Ingredients
  • 1 T olive oil
  • 3 chicken breasts 
  • 3 cans of crushed fire-roasted tomatoes
  • 8 oz chorizo sausage
  • 1 C - Yellow onion, roughly chopped
  • 1 T garlic - minced
Spice Mixture 
  • 1 tsp dried oregano
  • 2 tsp light brown sugar
  • 1⁄2 tsp ground cumin
  • 1⁄4 tsp dried thyme
  • 1⁄4 tsp dried marjoram
  • 1 tsp kosher salt
  • 1⁄2 tsp black pepper

 Directions
  1. Sear the chicken & place in the slow cooker (on high) with 3 cans of tomatoes 
  2. Brown the chorizo, add in the onions for 5 minutes, add garlic for one minute, then add to the slow cooker
  3. Mix the spices until well blended, then add to the slow cooker for 4 hours.
