Chicken Tinga Tacos
Ingredients
- 1 T olive oil
- 3 chicken breasts
- 3 cans of crushed fire-roasted tomatoes
- 8 oz chorizo sausage
- 1 C - Yellow onion, roughly chopped
- 1 T garlic - minced
Spice Mixture
- 1 tsp dried oregano
- 2 tsp light brown sugar
- 1⁄2 tsp ground cumin
- 1⁄4 tsp dried thyme
- 1⁄4 tsp dried marjoram
- 1 tsp kosher salt
- 1⁄2 tsp black pepper
- Sear the chicken & place in the slow cooker (on high) with 3 cans of tomatoes
- Brown the chorizo, add in the onions for 5 minutes, add garlic for one minute, then add to the slow cooker
- Mix the spices until well blended, then add to the slow cooker for 4 hours.
