Maine Lobster Roll


Lobster Rolls
(Makes 2 rolls)

Ingredients
  • 12 oz cooked lobster meat
  • 2 rolls
  • ¼ C mayo
  • 2 T Lemon juice
  • 1 T chopped parsley
  • ½ T capers
  • Salt & pepper
Directions
  1. Toss together the mayo, lemon juice, parsley, capers, salt & pepper
  2. Fold in the lobster meat
  3. Toast the two rolls, and spoon mixture over in the roll
  4. Drizzle with remaining sauce
