Maine Lobster Roll
Lobster Rolls
(Makes 2 rolls)
Ingredients
- 12 oz cooked lobster meat
- 2 rolls
- ¼ C mayo
- 2 T Lemon juice
- 1 T chopped parsley
- ½ T capers
- Salt & pepper
- Toss together the mayo, lemon juice, parsley, capers, salt & pepper
- Fold in the lobster meat
- Toast the two rolls, and spoon mixture over in the roll
- Drizzle with remaining sauce
