Pancetta pear crisps with whipped goat cheese

Ingredients
1.     1 Bartlett pear cored and cut into 12 slices
2.    12 slices of pancetta (cooked at 450 for 8 to 10 minutes)
3.    4 oz of Goat Cheese
4.     Honey
5.     Thyme

Whipped Goat Cheese
·        1 - 8 oz container of goat cheese
·        2 T heavy cream or whole milk
·        1 T olive oil
·        Truffle salt & pepper
·        1 tsp champagne vinegar 

Directions: Food process until fluffy

Directions
This is just assembly:
1.     Pear slice on the bottom
2.    Slice of pancetta on next
3.    Dollop of whipped goat cheese
4.     Thyme
5.     Honey drizzle over the top
