Classic Chicken Salad

Chicken Salad

Ingredients
·       2 pounds chicken tenders
·       32 ounces low sodium chicken stock
·       1 C mayonnaise
·       1 T finely minced celery
·       1 T dry Ranch salad dressing mix
·       1 tsp Dijon mustard
·       ½ teaspoon salt
·       ¼ teaspoon ground black pepper


Instructions
1.     Fill a large pot with the chicken tenders and chicken stock. Simmer over medium heat for about 15 minutes
2.    Shred chicken: put the chicken in a stand mixer by using a paddle attachment. 
3.    In a medium sized bowl add celery, mayonnaise, dry Ranch dressing mix, salt and black pepper. Stir until well blended.
4.     Add shredded chicken and mix in well.
