Korean Beef Tacos
10 Tacos

Ingredients
·       2 lbs. top sirloin (see notes)
·       1 T sesame oil
·       ½ C brown sugar
·       ½ C soy sauce
·       2 T garlic - minced
·       3 T Squeezed ginger, or minced
·       1 14-ounce can pears, drained
·       1 tsp crushed red-pepper flakes

Directions
1.     Pulse pears, ginger, garlic, soy sauce, sesame oil, and brown sugar until mostly smooth. Reserve half for later use (see notes).
2.    Trim any fat off the meat and cut into a few large chunks and marinade with ½ the sauce for one day (optional) 
3.    Place in a slow cooker and cover with the sauce it was marinating in and cook on low for 6-8 hours. Pull the meat apart with 2 forks or use the paddle on stand-up mixer

For the Kimchi

·       2 teaspoons sesame oil
·       1 C chopped kimchi
·       1 teaspoon sugar

For the Tacos:
·       Chopped cilantro
·       Sesame seeds or chopped peanuts
·       Diced red onion
·       Kimchi or slaw of some sort
·       Sriracha mayo
·       Flour tortillas

For the sriracha mayonnaise
·       ¼ cup mayonnaise
·       1 tablespoon Sriracha
·       2 teaspoons freshly squeezed lime juice
