Ahi Tuna Bowls


Dressing
  • 1/3 C low-sodium soy sauce
  • 1 T rice vinegar
  • 1 T sesame oil
  • 1 tsp ginger
  • ¼ tsp crushed red pepper flakes
  • 1 tsp. toasted sesame seeds, plus more for garnish


Other:
  • 1 lb. ahi tuna, cut into bite-size piece
  • 1 C White or brown rice, tossed with ¼ C of Cilantro
  • Avocado
  • Diced cucumber
  • Shredded carrots
  • Sliced radishes
  • Sriracha mayo


Directions:
  1. Whisk together soy sauce, rice vinegar, sesame oil, ginger, and red pepper flakes
  2. Add the diced tuna to the mixture and refrigerate for 15 – 45 minutes
  3. Assemble the bowls bottom up: Rice, cucumber, carrots, radishes, pickled onions, kimchi, mango salsa
