Cilantro Lime Chicken - Sous Vide

Ingredients:
·       3 skinless boneless chicken breasts
·       Salt & Pepper to season the chicken
·       1 T olive oil
·       1 C chicken broth 
·       1 lime - juiced
·       ½ C finely chopped onion
·       ½ C sliced mushrooms
·       1 T chopped cilantro
·       ½ tsp red pepper flakes
·       ¼ C heavy cream
·       2 Tablespoons unsalted butter, separated
·       ½ C parmesan cheese - shredded 

Directions:
1.     Sous vide the chicken breasts for 45 minutes at 149°
2.    Heat the oven to 170° to hold the chicken
3.    In a saucepan, heat the oil and sear the chicken until it browned on both sides - 3 minutes p/side
4.     Remove the chicken and place it in the oven to keep warm
5.    In the same pan add 1 T of butter and sauté onion & mushrooms, while scraping the brown bits from the bottom of the pan. 
6.    Add chicken broth, lime juice, cilantro & red pepper and bring to a simmer for 10 minutes 
7.    Add the cream and 1 T of butter to allow the sauce to thicken
8.    Add the chicken back to the pan
9.    Remove the chicken onto a plate and cover with parmesan cheese
10.  Spoon sauce over the top of the chicken to melt the cheese and serve with extra sauce.

11.   Lime wedges for garnish & side of rice / broccoli
