Fancy Grilled Cheese

Ingredients

·       4 slices of thick cut sourdough bread

·       4 slices of Gruyere cheese

·       Couple handfuls of shredded cheddar cheese

·       4 slices of Muenster cheese

·       1 Yellow onion sliced

·       4 oz mushrooms

·       1/2 tsp brown sugar

·       1 tsp rosemary - minced

·       1 tsp thyme - minced

·       2 T butter

·       Salt & pepper

Directions

1.     Melt 1 T of butter

2.    Sauté onions for 5 minutes

3.    Add mushrooms and sauté for 5 minutes

4.     Add brown sugar, rosemary and thyme until well mixed, set aside

5.    Butter the bread, cook both sides open faced, add cheese & onion mixture until sides are starting to melt. Then close the sandwich and finish cooking.
