Roasted chicken in a Lemon Basil Sauce

Lemon
Basil Sauce:

T of butter
·
1
C of heavy whipping cream
·

basil leaves - finely sliced
·
1
Garlic clove minced
·
1
Chicken bouillon cube
·
3
T of lemon juice
·

Chicken breasts
Directions:
1. Sous Vide the chicken for 45
minutes
2. Melt the butter, sear the chicken,
set aside
3. Whisk in the cream with the
butter, scrape any brown bits
4. Add the garlic, basil and chicken
bouillon and bring it to a simmer
5. Slowly mix in the lemon juice
6. Once the bullion has dissolved
the sauce is ready
7. If you want the sauce thicker let
the sauce simmer a little longer
8. Spoon this over the chicken and
serve
Garlic
Spinach
·
1 large
container of spinach, stems removed
·
1 ¼ T of
olive oil
·
1 T garlic
cloves, minced
·
1 ½ tsp of
kosher or truffle salt
·
½ tsp of
freshly ground pepper
·
1 T of
unsalted butter
·
1 lemon
Directions:
1.
Heat the oil
in a pan
2.
Add the
garlic for a few minutes until fragrant
3.
Toss in the
spinach and sauté until it is wilted
4.
Remove from
the pan and put it in a bowl along with the butter, a little more salt and a
squeeze of lemon
