Whole Roasted Cauliflower with Whipped Goat Cheese

Boiling Ingredients 
·       2.5 C of dry white wine
·       1/2 G of water
·       1/3 C olive oil
·       1/4 C Kosher salt
·       3 T Lemon Juice
·       2 T Unsalted Butter
·       1 T Crushed red pepper flakes
·       1 T Sugar
·       1 Bay Leaf
·       1 Head of Cauliflower, trimmed

Directions
1.     Preheat oven to 475°
2.    Bring the ingredients (except cauliflower) to a boil, reduce to a simmer
3.    Add the cauliflower and turn after 8 minutes and let it cook for another 8-9 minutes. 
4.     Remove after 15 - 20 min total / when it's knife tender
5.    Drain well and place on a tin foil lined baking sheet. 
6.    Roast for 30-40 minutes

Whipped Goat Cheese:
·       4 Oz Goat Cheese
·       3 Oz Cream Cheese
·       3 Oz Feta Cheese
·       1/3 C Heavy Cream
·       2 T Olive Oil
·       Coarse sea salt

Directions: Place all ingredients in a food processor and process until smooth
