Breakfast Pizza


Base Ingredients
·       12 Oz hash browns, defrosted
·       6 Oz breakfast or andouille sausage, browned
·       3 eggs
·       1 C cheddar or mozzarella cheese 
·       Salt & pepper
·       Toppings 
·       1 C cheddar or mozzarella cheese 
·       6 slices of bacon, cooked & chopped 
·       1/2 C Sautéed mushrooms 
·       1/2 C Caramelized onions 

Finishing touches 
·       4 Poached eggs 
·       3 T basil, chiffonade cut

Directions
1.     Preheat oven to 400°
2.    Mix the eggs, sausage, hash browns, cheese, salt & pepper
3.    Spray a 12” oven-proof sauté pan with cooking spray, then press the hash brown mixture into the pan 
4.     Cook for 20 minutes, rotating 1/2 way through 
5.    Remove and add cheese, onions, mushrooms, and bacon and return to the oven for 10-15 minutes / or until the cheese is bubbling 
6.    Remove from the oven and add the poached eggs and garnish with basil.
