Roasted Rack of Lamb

Ingredients:
· 1 ½ lb. rack of lamb - French cut
· ½ C panko breadcrumbs
· 1 T Sage - finely cut
· 1 T rosemary - finely cut
· Salt & pepper
· Mustard to coat
Directions:
1. Remove the lamb from the fridge
45 minutes prior to cooking
2. Fire up the Traeger to 500°
3. Coat the lamb with mustard
4. Mix breadcrumbs, rosemary, sage,
salt & pepper then spread liberally over the mustard
5. Add the probe into the thickest
part of the lamb
6. Roast until the probe is 125° for
medium or 120° for medium rare
