Ingredients:
· 2 tsp salt
· Olive oil
· 2 tsp garlic
· ½ yellow onions
· 6 white mushrooms cut into slices
· ¼ C Parmesan cheese, shredded
Directions:
1. Put the noodles in a colander and
add 2 tsp of salt, toss, leave sitting for 30 minutes to pull out moisture
2. Sauté onions and mushrooms
3. Add garlic sauté for a minute
4. Add zucchini, toss for 2 minutes
5. Plate, then top with Parmesan
cheese
