Tequila Lime Mahi Tacos

Tequila Lime Mahi Tacos
4 tacos total

Marinade:
·       ¼ C lime juice
·       3 T tequila
·       1 T roughly chopped cilantro
·       1 T finely chopped garlic
·       1 tsp cumin
·       1 tsp chili powder
·       Salt & pepper
·       8 oz. mahi mahi

Other
·       8 corn tortillas
·       1/2 avocado - sliced
·       2 limes quartered for serving

Directions:
1.     Mix the marinade and add mahi for 1 hours prior to cooking
2.    Sauté the Mahi for about 4 to 5 minutes per side
3.    Remove the Mahi and break it into small chunks, add some salt & pepper before serving
4.     Heat the tortillas on the flat top or grill for about 10 seconds per side

Add in’s:
·       Cabbage slaw (recipe below)
·       Cilantro
·       Cotija or pepper jack cheese
·       Radishes
·       Mango salsa
·       Crema (recipe below)
·       Jalapeno
·       Pickled onions
·       Avocado


Cabbage Slaw Ingredients
·       ½ C Mayo
·       ½ C Sour Cream
·       2 limes - juiced & rind removed
·       2 garlic cloves minced
·       ½ C Cilantro - chopped
·       ½ head of red cabbage - thinly sliced
·       Salt & pepper to taste

Directions:
1.     Mix the first 4 ingredients in a bowl
2.    Toss the red cabbage in with the mixture
3.    Chill & Serve

Crema Ingredients
·       ¼ C Mayo
·       ½ C Sour cream
·       2 T milk
·       2 T cilantro 
·       Juice from 1 lime
·       Lime zest
·       1 tsp honey
·       ½ tsp salt

Directions: Puree all ingredients until smooth - adjust with salt to taste

Additions: Chipotles in adobo sauce, pureed. Add 1 - 2 T depending on heat tolerance.
