California Shredded Chicken Salad with Lime Vinaigrette

California Shredded Chicken w/ Cilantro Lime Vinaigrette
2 dinner portion servings or 4 side salads

Ingredients:
·       3 C lettuce
·       1 C shredded chicken (I hate the canned stuff so I do my own)
·       ¼ C cooked and cooled corn
·       ¼ C thinly sliced red peppers
·       ¼ C Cucumbers - skinned and diced
·       ¼ C Baby Tomatoes

Cilantro Lime Vinaigrette
·       ½ C Vegetable oil
·       ¼ C balsamic vinegar
·       Juice & Rind from 1 lime
·       1 tsp Honey
·       1 tsp Dijon Mustard
·       2 T of cilantro
·       ¼ tsp Garlic salt
·       Salt & Pepper to taste

Directions: Shake or food process for 20 second and serve. This should make enough for several salads. All depends on how much dressing you like to use.

·       Lemon basil vinaigrette
·       Red wine vinaigrette
·       White wine vinaigrette
·       Raspberry basil
·       Strawberry vinaigrette
