Cuban Roasted Potatoes

Cuban Roasted Potatoes

Ingredients:
·       4 Medium red or yellow potatoes - 1" chop
·       1 Lime w/ Lime rind

Sauté mixture:
·       1/2 bell pepper
·       1/2 green pepper
·       1/4 C yellow onion
·       1 1/2 garlic cloves, minced
·       1 tsp olive oil

Mix:
·       1 ½ T of olive oil
·       1 tsp oregano
·       ½ tsp cumin
·       ½ tsp salt
·       ¼ tsp pepper
·       ½ T Dijon mustard
·       1/8 tsp cayenne pepper
·       ¼ tsp chili powder
·       1 T cilantro diced

Directions
1.     Pre-heat the oven to 400° degrees
2.    In a large bowl blend the mix together
3.    Sauté the vegetables to get a light char on them then add them to the bowl with the mix
4.     Toss the diced potatoes in the mixture and place on a baking sheet (not stacked)
5.    Sprinkle a little more salt over the top
6.    Roast for 40 minutes at 400 degrees
7.    Remove from the oven and squeeze the lime juice over the potatoes and toss with the lime rind
