Pork Tenderloin With Peach BBQ Sauce


Pork Tenderloin with Peach BBQ Sauce
8 6 oz servings

Marinade:
·       4 lemons
·       ½ C of olive oil
·       1 T Garlic
·       1.5 T Rosemary
·       1 T Thyme
·       1 T salt
·       1 tsp pepper 

Protein:
·       3 lb. Pork Tenderloin 

Directions:
1.     Preheat oven to 400°
2.    Marinade for 3+ hours
3.    Sear in 2 T of olive oil in an oven proof pan
4.     Transfer to oven for 10-15 minutes until the largest part of the tenderloin reaches 135°-140°
5.    Remove and wrap tightly in tin foil for 10 minutes 

BBQ Sauce Ingredients:
·       ½ fresh peach skinned & without seed 
·       ½ C BBQ Sauce

Directions: 
1.     To remove skin from Peach, boil for 25 seconds then transfer to an ice bath. 
2.    Cut 1/2 the peach into cubes
3.    Add peaches and BBQ in a blender and purée
