Brunch Frittata

8 healthy servings

Ingredients:

·       12 Eggs

·       ¼ C Milk

·       1 tsp salt

·       ½ tsp pepper

·       ½ C button mushrooms sliced

·       1 Red bell pepper chopped

·       ½ lb Breakfast sausage, browned

·       ½ C of cheese for topping

 

Directions:

1.     Turn on the broiler

2.    Sauté the Mushrooms, bell peppers in an oven proof pan

3.    Mix the eggs, milk, salt & pepper with an emulsion blender

4.     Pour egg mixture into the sauté pan, add the sausage & cheese and let the mixture firm up around the sides (10 minutes or so)

5.    Finish in the broiler for 2 or 3 minutes

6.    Top with cheese for the last 1 minute /or until melted

 

Sauté mixture suggestions:

·       Caramelized onions, zucchini, goat cheese & sweet Italian sausage

·       Jalapeños, cilantro, bell peppers and cotija cheese

·       Chorizo sausage, tomatoes, bell peppers & mushrooms

·       Spinach, avocado, mushrooms, tomato & goat cheese
