Chili
10 Healthy Servings
Ingredients:
· 3 bell peppers - 1/2" cubes
- I use a yellow, orange and red
· 3 garlic cloves - minced
· 1 yellow or white onion - finely
diced
· 3 - 14.5 oz cans of chili beans
· 3 - 14.5 oz cans of petite diced
tomatoes
· 2 lb. of sweet Italian sausage
Dry
mixture
· 1 ½ T of Chili Powder
· 1 ½ tsp of cayenne pepper
· 1 ½ tsp of oregano
· 1 ½ tsp of cumin
· ¾ tsp of salt
· 1/3 tsp of pepper
Directions:
1. Brown the sausage in one pan
2. At the same time, add some olive
oil to a large pot and toss in the onions at medium heat. Sauté for 10 minutes
or so.
3. Add the garlic, cook for another
minute.
4. Add in the sausage & the remaining
ingredients.
5. Bring to a boil, reduce to a
simmer and cook for 45 minutes to an hour.
I
always serve with some shredded cheese & Frank's hot sauce. This make a
good size portion. probably enough for 8 to 10 healthy size portions. It reheats
in the microwave well so you can always make it for a good "I'm lazy and
don't want to cook" night.
