Steak Sandwich

Steak Sandwiches
Makes 6 sandwiches
Ingredients
·       1 ½ lb. flank steak
·       1 yellow onion
·       1 red pepper - Julienne cut
·       6 6” rolls - 
·       8 slices of provolone cheese 

Marinade 
·       ½ C Olive oil
·       ¼ C Lemon Juice
·       ¼ C Balsamic vinegar
·       2 T Mustard
·       1 T Garlic - minced
·       Salt & pepper to taste 


Directions
1.     Marinade the steak for a day
2.    Sous Vide at 129° degrees for 45 minutes
3.    Turn on the broiler 
4.     Remove the meat from the Sous Vide, sear for 2 minutes per side, set aside and let the juices settle for 10 minutes. Cut in really thin slices against the grain
5.    Sauté onion and red pepper for 10 - 15 minute until almost caramelized.
6.    Stack the steak, onions, and provolone and broil until the cheese melts
7.    Add some Chimichurri to top it off
