Sous Vide Pork Chops w/ a sweet onion glaze

Brine Ingredients
·       1 C water
·       ¼ C brown sugar
·       3 T C kosher salt
·       1 T Rosemary
·       1 T garlic - minced
·       3 C ice

Directions
1.     Boil all ingredients except ice
2.    Add ice to reduce to room temp
3.    Add brine & pork chops to Zip-lock
4.     Brine for 16 hours

Ingredients
·       2 bone-in Pork chops
·       ¼ C Sweet onion jam
·       Salt & pepper

Directions:
1.     Sous Vide
2.    Sear
3.    Coat with the sweet onion jam
