Cornbread & Jalapeno Cornbread

Dry ingredients
·       1 C Flour
·       1 C Cornmeal
·       1/3 C Sugar
·       1 tsp Kosher salt
·       1 T Baking powder

Wet ingredients
·       2 eggs
·       1 C milk
·       6 T butter melted or 1/3 C Veg. Oil

Other ingredients
·       4 oz shredded cheddar cheese
·       Additional add in: 4 T jalapeno

Directions
1.     Mix the dry ingredients together in one bowl
2.    Mix the wet ingredients together in another bowl
3.    Add the wet to the dry and gently stir until lumps are gone
4.     Add most of the cheese to the mixture. Reserve a handful for topping. Add jalapenos on this step if you want them
5.    Let the mixture sit for 20 minutes while you preheat the oven to 400
6.    Top the mixture with some cheddar 
7.    Bake for 20 minutes at 400 or until it passes the toothpick test.
