·       ¼ cup fresh lime juice

·       ¼ cup olive oil

·       1 tsp kosher salt

·       ½ tsp freshly ground black pepper

·       ¾ tsp ground cumin

·       1 lb. skirt steak

Cilantro - lime - pineapple crema

·       2 T Mayo

·       ¼ C Sour cream

·       1 T milk

·       1 T cilantro 

·       Juice from 1 lime

·       Lime zest

·       ½ tsp honey

·       ¼ tsp salt

·       2 oz of pineapple 

Toppings

·       Pickled onions

·       Pineapple

·       Cilantro

·       Cotija cheese

·       Jalapeno 

·       Radishes 

·       Avocado

·       Tomatoes 

·       Pepper jack cheese

·       Mango

·       Red Onion

·       Serve on corn grilled flour tortillas
