Caprese Balsamic & Mozzarella Chicken
Ingredients:
- 2 chicken breasts - butterflied / split
- 1/2 C Balsamic
- 1/4 C Olive oil
- 1 tsp garlic - minced
- 1 T honey
- 1 T Italian seasoning
- Salt & Pepper
- 8 medallions of mozzarella - sliced
Topping mixture
- 1 Tomato - diced
- 1 Avocado - diced
- 2 T Basil - chiffonade cut
- Salt & pepper
Garnishes:
- Pickled onions
- Balsamic glaze
Directions:
- Mix together a marinade with the balsamic, olive oil, garlic, honey, Italian seasoning, honey, salt & pepper
- Place chicken in the marinade for 1 hour up to 24 hours
- Prior to cooking: make the topping mixture in a bowl and set aside
- Prior to cooking: heat the broiler
- Remove the chicken from the bag and discard liquids
- In an oven proof pan, cook the chicken on the stovetop all the way through
- Place the mozzarella on top and slide under the broiler until the cheese melts
- Top with tomato / avocado mixture, pickled onions and balsamic glaze
