Caprese Balsamic & Mozzarella Chicken


Ingredients:

  • 2 chicken breasts - butterflied / split
  • 1/2 C Balsamic 
  • 1/4 C Olive oil
  • 1 tsp garlic - minced
  • 1 T honey 
  • 1 T Italian seasoning 
  • Salt & Pepper
  • 8 medallions of mozzarella - sliced


Topping mixture

  • 1 Tomato - diced 
  • 1 Avocado - diced
  • 2 T Basil - chiffonade cut
  • Salt & pepper 


Garnishes: 

  • Pickled onions 
  • Balsamic glaze 


Directions:

  1. Mix together a marinade with the balsamic, olive oil, garlic, honey, Italian seasoning, honey, salt & pepper 
  2. Place chicken in the marinade for 1 hour up to 24 hours
  3. Prior to cooking: make the topping mixture in a bowl and set aside
  4. Prior to cooking: heat the broiler 
  5. Remove the chicken from the bag and discard liquids
  6. In an oven proof pan, cook the chicken on the stovetop all the way through
  7. Place the mozzarella on top and slide under the broiler until the cheese melts
  8. Top with tomato / avocado mixture, pickled onions and balsamic glaze
