Thanksgiving Turkey Gravy

Ingredients (makes 3 C)
  • 1 stick butter
  • 1 T Garlic
  • 1.5 cups chopped yellow onion (2 onions)
  • 1/4 C flour
  • 2 C - mixture of defatted turkey drippings and chicken stock 
  • 1 tsp Kosher salt
  • 1/2 tsp Ground black pepper
  • 2 T B&B
  • 1 T Heavy cream

Directions
  1. Caramelize the onions in the butter
  2. Add the garlic for 1 minute 
  3. Add in flour
  4. Add in 2 C of turkey drippings / chicken stock mixture, B&B and bring to a boil, reduce to a simmer until it thickens
  5. Add heavy cream then season with salt & pepper
