Glazed Carrots

Glazed carrots with pistachios
Makes 10 to 12 servings.

Ingredients
·       2 lb. of baby carrots or full stem with the greens still on 
·       3 C Water 
·       ¼ tsp salt 
·       ½ C pistachios, shelled and unsalted
·       ¼ C Butter 
·       ¼ C packed brown sugar 
·       1 ½ tsp of fresh thyme

Directions
1.     Bring enough water to barely cover the carrots to a boil and reduce to a simmer for 8 - 10 minutes.  Drain and set aside
2.   Melt the butter in the same saucepan, add brown sugar, pistachios & thyme to create a glaze.
3.   Add the carrots back into the mixture for 3 - 5 minutes
4.   Season w/ salt & pepper, garnish with the pistachios
Note: you can switch out brown sugar with honey or maple syrup... You can also add bourbon, cinnamon, citrus elements (orange or lemon zest)
