Roasted Brussels Sprouts


Ingredients

  • 1.5 Lb of Brussels sprouts - Ends trimmed / Cut in half
  • 2 T Olive Oil
  • Kosher salt & pepper
  • 5 Slices of thick cut bacon - diced
  • Lemon - rind & juice
  • 1/4 C parmesan or goat cheese 




Directions
  1. Preheat the oven to 400
  2. Cut the ends off the Brussels sprouts, then cut in half
  3. Add sprouts, olive oil, bacon, salt & pepper to a oven proof bowl
  4. Roast for 30 minutes
  5. Remove, add cheese, lemon rind, lemon juice
  6. Put back in the oven for 4-6 minutes or until cheese is melted
