Roasted Brussels Sprouts
Ingredients
- 1.5 Lb of Brussels sprouts - Ends trimmed / Cut in half
- 2 T Olive Oil
- Kosher salt & pepper
- 5 Slices of thick cut bacon - diced
- Lemon - rind & juice
- 1/4 C parmesan or goat cheese
Directions
- Preheat the oven to 400
- Cut the ends off the Brussels sprouts, then cut in half
- Add sprouts, olive oil, bacon, salt & pepper to a oven proof bowl
- Roast for 30 minutes
- Remove, add cheese, lemon rind, lemon juice
- Put back in the oven for 4-6 minutes or until cheese is melted
