The national dish of Cuba...
Ingredients
· 2 lb. Flank steak
· Kosher Salt & Fresh Ground
Pepper
· 1 C Beef broth
· 1 - 8 oz can of tomato sauce
· 1 - 6 oz can of tomato paste
· 1 Sweet onion - sliced
· 2 Bell peppers - sliced (1 red, 1
green)
· 1 T Garlic - minced
· 1 tsp Cumin - ground
· 1 T Cilantro - fresh, plus more
for garnish
· 1 T Oregano - fresh
· 1 tsp Paprika
· 1 T of Apple cider vinegar
· 2 Bay leaves
· 1/2 C of Roasted Red Peppers -
sliced
· 2 T of Capers
Directions
1. Turn crock pot on low
2. Season steak
3. Sear in a hot pan in oil
4. Transfer the steak to the crock pot
5. Add onions & bell peppers to
the hot pan and cook for 12 - 15 minutes, allow them to caramelize.
6. Add in garlic for 1 minute
7. Add in stock and deglaze the pan
8. Add in tomato paste, sauce, spices,
and apple cider vinegar and bring to a simmer
9. Add mixture to the crock pot
10. Add in bay leaves and cook on low
for 8 hours (or low for 4 hours)
11. Remove the meat from the crock
pot, shred and return to the mixture
12. Mix in roasted bell peppers &
capers
13. Let it simmer uncovered for 30
minutes to allow the sauce to thicken
14. Serve with rice & garnish
with cilantro
