Sous Vide Turkey Breast
Ingredients:
Citrus brine
- 2.5 Lb bone in Turkey Breast
- 1 tsp Sage
- 1 tsp Thyme
- 1 tsp Oregano
- 2 tsp Salt
- 1 tsp Pepper
Citrus brine
- 1 C salt
- 1 Lemon, cut into wedges
- 1 Orange, cut into wedges
- 1 Onion - Medium, cut into wedges
- 3 T Garlic - minced
- 4 Bay leaves
- 1 T Thyme - minced
- 1 T Black pepper
- 1.5 Gal cold water
Directions
- Brine the turkey overnight, discard liquid after it is done.
- Remove the turkey and pat dry
- Cover in the herb mixture
- Place in a zip lock bag
- Sous Vide at 147 for 2.5 hours
- Heat a pan with olive oil
- Remove the turkey and sear for about a minute on each side
