Sous Vide Turkey Breast

Ingredients:

  • 2.5 Lb bone in Turkey Breast
  • 1 tsp Sage
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 2 tsp Salt 
  • 1 tsp Pepper


Citrus brine

  • 1 C salt
  • 1 Lemon, cut into wedges
  • 1 Orange, cut into wedges
  • 1 Onion - Medium, cut into wedges
  • 3 T Garlic - minced
  • 4 Bay leaves
  • 1 T Thyme - minced
  • 1 T Black pepper
  • 1.5 Gal cold water

Directions
  1. Brine the turkey overnight, discard liquid after it is done.
  2. Remove the turkey and pat dry
  3. Cover in the herb mixture
  4. Place in a zip lock bag
  5. Sous Vide at 147 for 2.5 hours
  6. Heat a pan with olive oil
  7. Remove the turkey and sear for about a minute on each side
