Stuffed Burgers & Corn Salad

Ingredients
·       1 ½ Lb. of 80/20 ground beef 
·       4 buns from bakery, preferably pretzel buns
·       10 slices of bacon (2 for the spread, 2 for each burger)
·       L-T-O
·       Salt & Pepper
·       4 oz cream cheese (softened)
·       1 T Chipotle mayo 
·       4 thick cut slices of smoked cheddar 
·       1/2 tsp liquid smoke

Directions: 
1.     Mix chipotle mayo, softened cream cheese, 2 crumbled pieces of bacon, liquid smoke, salt and pepper and set aside 
2.    Make 8 thin patties and lay them out 4 X 2 
3.    1 T of the chipotle cream cheese mix on 4 of the patties 
4.     Cover them with the other patty 
5.    Pinch he sides and form, salt & pepper the outsides
6.    Let them come up closer to room temp (30 minutes or so) 
7.    Grill the burgers, toast buns, melt cheese & serve with L-T-O and bacon

Side suggestions:
·       Roasted fries 
·       Orzo salad
·       Pasta salad
·       Potato salad 
·       Grilled corn (below)

Spicy grilled corn
·       4 corn husks
·       1 stick of butter (melted)
·       1 tsp chili powder
·       1/2 tsp salt
·       1/4 tsp pepper
·       1 Lime, rind & juice

Directions:
·       Preheat the oven to 220
·       Boil the husks for 10 minutes then shuck 
·       Mix the butter & spices 
·       Brush the corn stalks
·       Roast for 15 minutes.
