Bacon Potato Salad

Main Ingredients:
2 lb Red Potato cut in 1/2" cubes
1 lb Bacon, Applewood smoked, cooked and diced
2 Eggs - large, hard boiled, diced

Other ingredients:
3/4 C Mayo
3 T Dijon mustard
1 small red onion diced
2 T red wine vinegar
1 T Sugar
1 tsp salt
1/2 tsp pepper

Directions:

  1. Put the potatoes in cold water and bring to a boil, then reduce to a simmer for 15 minutes until they are fork tender
  2. Remove, drain and spread them on a sheet pan to allow them cool quickly. This prevents them over cooking
  3. Mix the other ingredients together in a small mixing bowl
  4. Once the potatoes are cooled, put them in a large mixing bowl, add the bacon and hard boiled egg.
  5. Then fold in the Mayo-Dijon mixture. 
  6. Chill then serve
If you add some color contrast in here, add some scallions. 
This holds well for 3-4 days.
