Kale & Quinoa Summer Bowl
Kale & Quinoa Summer Bowl

Ingredients
· 1 C Quinoa - cooked makes about 2
cups
· 3 C Kale - Finely chopped
· ½ C Cilantro - Finely chopped
· ¼ C Mango - fresh - diced
· 1 Yellow bell pepper - cut into
matchsticks
· 1 C Tomato - seeded & diced
· ½ Cucumber - skinned, seeded
& diced
· ¼ C goat cheese
· 2 T of pickled onions
· 2 Sausage links - grilled and cut
down the center then cut into 1/4" pieces
· 1 Avocado - sliced
· ¼ C Lemon vinaigrette
· 6 oz
of protein (Grilled steak or chicken)
Directions
1. Cook the quinoa according to the
package, set it aside and let it cool
2. In a mixing bowl, add quinoa,
kale, cilantro, mango, yellow bell pepper, tomatoes, cucumber, goat cheese and mix
with 2 T of the vinaigrette
3. Separate into two serving bowls
4. Add the sausage pieces, avocado
& pickled onions,
5. Split the remaining dressing between
the two bowls
