Summer tomato and peach salad

Summer Tomato & Peach Salad

Ingredients
·        4 Heirloom tomatoes - cut into large wedges 
·        10 Cherry tomatoes - cut in halves 
·        1 Cucumbers - peeled, cut in halves then obliques 
·        1 lb. Peaches - pitted & cut into ½“ squares
·        1 Avocado - sliced
·        ½ cup Goat cheese - crumbled 
·        ½ cup Kalamata olives - finely chopped 
·        ¼ cup Lemon-Basil Vinaigrette (below)
·        ¼ cup Mint leaves, cleaned and torn into ½ -inch pieces 
·        ¼ cup Basil leaves, cleaned and torn into ½ -inch pieces 
·        1 Tbsp. Maldon salt

Lemon Basil Vinaigrette
·        ½ cup Olive oil 
·        2 lemons - juiced 
·        1 tsp Dijon mustard 
·        2 garlic cloves - minced 
·        Salt & pepper

Items substituted / removed from original recipe 
·        ½ cup pickled watermelon rind, cut in 1-inch batons 
·        1 lb. Seedless watermelon flesh, cut in 1.5-inch diamonds 
·        4 ea Tomatillos, small - cut into 1/4’s
·        ½ cup Toasted pistachios - roughly chopped 
·        Switch out the watermelon with peaches and the feta w goat
