Sous Vide Chicken with Sun-Dried Tomato Cream Sauce

Sous Vide Chicken w/ Sun Dried Tomato Cream Sauce

Ingredients
·       1.5 lb. chicken breast
·       Salt & pepper
·       1/4 C Onion - diced 
·       1 T Garlic - minced
·       ¼ C White wine, dry sherry,    or chicken stock
·       4 oz. Sun-dried tomato - sliced
·       ½ cup of heavy cream
·       1 tsp of capers
·       ¼ C Basil
·       1 T Butter

Directions
1.     Salt & Pepper chicken then Sous Vide for 45 minutes at 144°. We are under cooking it since we will finish it in the pan. 
2.    Heat oil in a pan and brown the chicken on both sides (2 minutes per side) then set aside
3.    Add onions and sauté for 2 minutes 
4.     Add garlic and sauté for 30 seconds 
5.    Deglaze with white wine / sherry / chicken stock
6.    Add in heavy cream, sun-dried tomatoes, capers, basil, salt and pepper 
7.    Bring to a simmer and let it start to thicken
8.    Add chicken back to the pan and coat
