Mussels in White Wine & Tomato Broth
4 servings

Ingredients
·       2 T + 1 T Butter
·       2 Shallots - diced
·       1 ½ T Garlic
·       1 Can tomatoes - chopped
·       1 ½ C White wine
·       ½ C Parsley - chopped
·       1 lemon - juiced and zested 
·       ¼ tsp red pepper flakes
·       Salt & pepper
·       2 lb. Mussels - cleaned & beards removed
·       2 T Heavy cream
·       4 slices of bread, garlic rubbed, oiled and grilled with a slight char

Directions
1.     Melt 1 T butter
2.    Sauté shallots until tender
3.    Add in garlic and sauté for 1 minute
4.     Add in wine, tomatoes, parsley, lemon juice, lemon zest, red pepper flakes, 2 T butter, salt and pepper. Bring the mixture to a boil then reduce to a simmer.
5.    Add mussels and put a lid on top, steam for 6-8 minutes
6.    Remove from the heat, add mussels to 2 separate large bowls, spoon broth over them
7.    Serve with grilled bread
