Shrimp & Quinoa Bowl

Ingredients

·       ½ C Quinoa

·       1 C water

·       Pickled onions

·       ½ C Red bell pepper

·       ½ C Mango salsa

·       1 Avocado

·       Tomatoes

·       Avocado lime crema or dressing

 

Shrimp

·       1 lb. shrimp - peeled / deveined 

·       ½ tsp Chili powder

·       ½ tsp Cumin

·       ½ tsp Cuban seasoning

·       Salt

·       Juice of one lime

 

Directions

1.     Cook quinoa according to the direction on the box and set aside

2.    Make a paste with the chili powder, cumin, Cuban seasoning, salt, and lime juice. Toss the shrimp in the paste and let it sit for 15 minutes

3.    Cook the shrimp on high heat for 90 seconds per side

4.     Layer the bowls: quinoa, Tomatoes, avocado, red bell peppers, pickled onions, avocado. Top with the shrimp and pour sauce on top
