Italian Beef Sandwich

Italian Beef Sandwich
10-12 sandwiches

Time: 6 hours - 1 hour in the smoker, 4 in the slow cooker, shred and another 1 hour back in the slow cooker. 

Ingredients
·       4 lb. chuck roast
·       8 C beef broth
·       Traeger prime rib mix or to can use this dry rub mix: 1 tsp of each: salt, pepper, oregano, basil, onion salt, parsley, & garlic powder & 1 bay leaf 
·       2 dry packs of Italian dressing mix 

Finishing
·       Hoagie buns 
·       Sharp provolone 
·       SautĆ©ed onions & red peppers 
·       Giardiniera 

Directions
1.     Cover the roast with the dry mix and preheat the oven or smoker to 450°
2.    Roast for 30 min, flip and roast for another 30 min. 
3.    Transfer to the slow cooker with beef broth, bay leaf & Italian dry mix on high for 4 hours. 

4.     Shred then return to the mix for another 45 minutes to soak up juices.
