Blackened Mahi Mahi with Mango Salsa

Mahi Mahi with Mango Salsa
2 Servings
Mango Salsa
·       1 C Mango - small dice 
·       3 T red onion - finely diced 
·       2 limes - juiced
·       1/2 C cucumber - small dice (seeded and peeled)
·       2 T cilantro - finely diced 
·       1 tsp Olive Oil
·       Salt 

Blackening Seasoning
·       3 T Smoked Paprika
·       2 tsp garlic powder
·       1 tsp onion powder
·       1 tsp salt
·       1/2 tsp pepper
·       1 tsp dried ground thyme
·       1 tsp dried basil
·       1 tsp dried oregano
·       1/2 tsp garlic powder
·       1/2 tsp cayenne pepper 

Other
·        2 Mahi Mahi Filets
·        1 T Butter

Directions:
1.     Mix the mango salsa and place in the fridge
2.    Remove the mahi from the fridge and pat dry
3.    Mix the blackening seasoning and coat all sides of the mahi
4.     In a sauté pan, melt the butter on high heat
5.    Cook for 3-4 minutes per side
