Pork chops with a Maple Bourbon Shallot glaze

Ingredients
·       2 - 8 Oz pork chops
·       1 shallot thin sliced
·       ½ stick of better (separated)
·       ¼ C Onion jam
·       ¼ C maple syrup
·       ¼ C Bourbon
·       1 T thyme
·       Salt
·       Pepper

Directions
1.     Sous Vide the pork chops
2.    Sear then in 2 T of butter, set aside in the warming drawer or in the oven at 170°
3.    Add remaining 2 T of butter
4.     Add the shallots and sauté for a few minutes until soft
5.    Add the remaining ingredients and reduce by half
6.    Return the pork chops to the pan and spoon sauce over the pork chops
