Shrimp & Pasta
4 Servings + some for leftovers
Ingredients
· 1 - 16 Oz container of fettuccine
· ¼ C Olive oil
· 1 lb. shrimp, peeled &
deveined
· 1 shallot, thinly sliced
· 1 T garlic, minced
· ¼ C Brandy
· 1 - 14 Oz can of diced tomatoes
· ½ C dry white wine
· ¼ C heavy cream
· 2 T flour
· 1 stick of butter
· ½ C Basil - chopped
· Salt & Pepper to taste
· Parmesan cheeses for garnish
Directions
1. Boil fettuccine according to the
package directions
2. Heat olive oil in a pan and sauté
shrimp for couple minutes, remove and set aside
3. Add in shallots, sauté for a few
minutes, add in garlic until fragrant.
4. Add in flour and then cream until
thickened.
5. Add in brandy and light for one
minute
6. Add in tomatoes, butter, basil,
wine, salt, pepper and Parmesan. Heat thoroughly
7. Add in fettuccine until mixed
8. Serve with Parmesan and basil
garnish
