Oven BBQ Chicken

Ingredients
·       8 pieces skin-on, bone-in chicken thighs and/or drumsticks (about 3 lb.)
·       1 T Kosher salt
·       1.5 tsp Brown sugar
·       1.5 Cumin
·       1 tsp black pepper 
·       1 tsp smoked paprika
·       1 tsp garlic powder
·       2 onions - sliced
·       2 T olive oil
·       1 cup store-bought barbecue sauce

Directions
1.     Preheat the oven to 350°
2.    Mix dry rub ingredients: brown sugar, salt, cumin, black pepper, smoked paprika & garlic powder.
3.    Season the chicken with the rub
4.     Spray an oven proof container with cooking spray
5.    Lay the onions on the base of the pan, toss them with olive oil, salt & pepper
6.    Lay the chicken on top
7.    Cook for 45 minutes in the top part of the oven
8.    Turn the broiler on for 4 minutes
9.    Remove the pan, turn the chicken over, coat with BBQ sauce and broil for 4 more minutes


Alternative to this: Sous Vide at 158 for 60 minutes, finish by broiling them in the oven. Onions can be caramelized on the stovetop.
