Smoked & Roasted Jerk Potatoes

Ingredients
·       ½ lb. red potatoes
·       Olive oil
·       Salt / pepper
·       Jerk seasoning
·       ½ onion - large dice
·       Garlic minced
·       Cooking spray
·       Disposable cooking tin
·       Applewood chips

Directions:
1.     Preheat the oven to 400°
2.    Cut the potatoes into 1" sizes
3.    Toss potatoes, jerk seasoning (see below), onion, olive oil, salt & pepper and place in the disposable cooking tin (sprayed with cooking spray)
4.     Start the smoker on a heavy smoke at 225° with the applewood chips
5.    Smoke for about 10 minutes
6.    Put the mixture in the oven for 35 - 40 minutes
