Shrimp & Orzo

Shrimp & Orzo

Ingredients
·       1 C orzo pasta uncooked
·       2 T butter 
·       2 tsp garlic - minced (I use garlic in a jar)
·       ½ lb. shrimp - peeled / deveined 
·       ½ small yellow onion diced
·       6 baby bella or white mushrooms sliced
·       2 ½ ounce jarred sun-dried tomato strips - rinsed and sliced 
·       1 cup 1% milk
·       Salt and pepper to taste
·       1 ½ cups baby spinach leaves
·       ½ cup fresh grated Parmesan cheese
·       1 teaspoon dried Italian herbs
·       ½ T dried parsley


Directions
1.     Cook orzo according to the direction on the box. Strain and set aside
2.    Melt 1 T of butter in a large saucepan and add garlic
3.    Add shrimp and cook until opaque, 2-3 minutes. Remove the shrimp and set aside
4.     Add onions & mushroom to the pan and sauté for 3-4 minutes
5.    Add sun dried tomatoes, sauté for another 1-2 minutes
6.    Add milk and bring to a simmer for 3 - 4 minutes, stir occasionally 
7.    Season mixture with salt & pepper
8.    Add spinach & cheese, mix until cheese is melted
9.    Remove mixture from heat and stir in orzo, Italian herbs & parsley
10.  Serve in bowls and add shrimp on top
