Mexican Street Corn v2.0
4 ½ C servings


Ingredients
·       6 ears of corn - grilled and cut (about 1.5 C)
·       ½ C Mayo
·       1 Lime - juiced
·       ¼ C Feta or cotija cheese, plus    some for garnish
·       2 T Cilantro - chopped, plus some    for garnish
·       2 tsp Chili powder
·       Kosher salt to taste

Instructions:
1.     Grill the corn
2.    Toss all together
3.    Cut from the stalks
4.     Toss all together in a mixing bowl
