Lemon Garlic Shrimp Kabobs

· 1.5 tsp kosher salt
· ½ tsp pepper
· Zest from 1 lemon
· Juice from lemon
· 1.5 T of minced garlic
· ¼ C basil - chiffonade cut
· ¼ C olive oil
· 1 lb. peeled / deveined shrimp
Directions
1. Mix the salt, pepper, lemon zest,
basil, pepper, garlic and 1 T of olive oil - mash into a paste
2. Mix in the remaining olive oil
3. Remove 1/3 of the mixture into a
separate bowl and mix in the lemon juice (sauce for dressing later)
4. Take the other 2/3's and add the
shrimp and marinade in the fridge for 30 minutes
5. Remove from the fridge and skewer
/ grill for a 90 seconds per side.
6. Serve with the sauce
