Lemon, Shrimp & Spinach pasta

Lemon, Spinach & Shrimp Pasta

Shrimp ingredients

·       1 T olive oil

·       1 lb. large shrimp, peeled and de-veined

·       Salt & pepper

 

Other

·       1 lb. spinach

 

Pasta Ingredients

·       1 lb. spaghetti, linguini or angel hair

·       ½ tsp kosher salt 

 

Mix in’s

·       ½ C butter

·       ½ C grated Parmesan  

·       1 tsp of Italian seasoning

·       2 T Pine nuts, toasted

·       1 T grated lemon zest (about 1 large lemon)

·       ½ C fresh lemon juice (about 3 large lemons)

 

Garnish & toppings

·       Truffle salt & pepper

·       ½ C chopped fresh basil

·       2 T capers

 

Directions

1.     Boil the noodles a little short of al dente, drain (reserve ½ C of the water) and put in a large bowl

2.    Sauté the shrimp w/ olive oil, salt & pepper until opaque and add to the noodles

3.    Sauté the spinach in the same pan and add to the noodles

4.     Mix in’s: whisk pasta water, butter, Parmesan, lemon zest, lemon juice, pine nuts, capers, and Italian seasoning in a bowl together until the butter has melted.

5.    Add the sauce with the pasta, shrimp, & spinach

6.    Season w/ salt & pepper

7.    Garnish w/ basil
