Pulled Pork Tacos (slow cooker or
smoker)
Serves: 10 - 12
Ingredients
· 5 lb. pork shoulder or pork butt
· 1 onion, chopped
· 1 jalapeno, de-seeded, chopped
· 1 T minced garlic
· 2 oranges, juiced
Rub
· 1 T dried oregano
· 1 T kosher salt
· 2 T chili powder
· 2 tsp ground cumin
Directions:
1. Coat pork butt in rub
2. Mix everything together in the
first section
3. Cook on high in a slow cooker for
5 hours or low for 10.
4. Pull the pork bone out and shred
the meat. Let it sit in the liquid for another hour.
5. Serve fresh diced pineapple,
thinly sliced red cabbage, fresh cilantro, cilantro lime crema, pickled
red onions
(if you are smoking it, coat it, then put it on the traeger at 250° for 4 hours or until it hits 160°, then in the oven covered at 300° for 3 more hours)
Cilantro
Lime Crema
· ½ C plain Greek yogurt or sour
cream
· ¼ C Mayo
· ¼ C cilantro
· 2 tsp minced garlic
· 1 Lime, rind & juice
· Salt to taste

until smooth
Pickled
Red Onions
· 1 Red onion sliced
· ½ C Red Wine Vinegar
· ¼ C White Wine Vinegar
· 1 tsp salt
· 2 tsp sugar
Directions:
1. Boil all the ingredients except
the red onion slices
2. Add in the red onions
3. Remove from heat and let it sit for
20 minutes
4. Can and refrigerate for up to 6
weeks
