Bruschetta Grilled Chicken
5 servings

Ingredients
·       5 Boneless / skinless chicken breasts, split into 4 oz filets (10 total pieces)
·       Marinade: Italian dressing
·       5 slices thick cut mozzarella cheese
·       Bruschetta mixture:
o   6 Roma tomatoes
o   ½ C Basil, chiffonade cut
o   ½ C Sun dried tomatoes
o   ¼ C Parmesan cheese, grated
o   1 T garlic
o   1 T C olive oil
o   1 T Balsamic vinegar
o   ¼ tsp salt
o   1/8 tsp salt
·       ¼ C of Basil for garnish

Directions
1.     Marinade the chicken 1 day prior
2.    Sous vide the chicken
3.    Sear with olive oil
4.     Cover with mozzarella cheese & broil for 20 seconds / until melted
5.    Spoon bruschetta mixture over the top, garnish with basil

Side suggestions:
·       Rice, sautéed spinach
·       Summer veggies w/ Green Goddess
·       Avocado tomato cucumber salad
