Mint Cucumber Salad
8 – ½ C servings
Ingredients
· ¼ C Greek yogurt
· 1 T lemon juice & zest
· 1 T Olive oil
· 2 - 3 T of Dill or Mint – finely chopped
· 1 T Parsley – finely chopped
· Salt & Pepper
· ½ C Onion – finely diced – soaked for 10 minutes in very
cold (almost ice) water.
· 4 medium cucumbers – skinned / seeded / diced
Directions:
1. Whisk Yogurt, lemon juice, zest,
olive oil, Mint or Dill, parsley, salt & pepper together
2. Add in onion & cucumbers and mix
3. Cool for an hour or so prior to
serving.
