Roasted Brussels Sprouts & Mushrooms with Bacon Jam Aioli

Roasted Brussels Sprouts & Mushrooms w/
 Bacon Jam Aioli

Aioli ingredients:
·        1/2 C mayo
·        1/2 lemon - juiced
·        1 tsp chili powder
·        1.5 tsp bacon jam
·        1 tsp garlic
·        Salt to taste 

Brussels Sprouts & Mushrooms:
·        1 lb of Brussels Sprouts - halved
·        1 lb of mushrooms - halved
·        Lemon rind from one lemon
·        1 tsp garlic
·        Olive oil
·        Salt 
·        Pepper

Directions:
1.     Preheat oven to 400°
2.    Toss Brussels Sprouts and mushrooms in garlic, olive oil and season with Salt & Pepper
3.    Spread evenly on a baking sheet (don't stack)
4.     Roast for 30 minutes
5.     While roasting prepare the aioli - mix all ingredients until smooth
6.     When finished, toss with aioli & serve
